Savory Stone Ground Polenta with Cheese

Savory Stone Ground Polenta with Cheese


1/2 cup Stone Ground Polenta, Weatherbury Farm 

2 tbsp butter 

2 Cups Water 

2 Cups Sharp White Cheddar 

1 Cup Gruyere Cheese 

1/4 Cup Goat Cheese 

Salt and Pepper to taste 


Set a medium pot to high heat and add water and polenta
Bring to boil, stirring occasionally.

Once water is boiling, cover, and set heat to low for 10 minutes, stirring occasionally to prevent sticking.

Remove from heat and stir in butter.

Once butter is fully incorporated, stir in cheeses, about 1/4-1/2 cup at a time until fully melted

Season with salt and pepper to taste.

Once the cheese is incorporated, return pot to low heat, stirring briskly until polenta reaches desired consistency; about 30 seconds

Garnish with crumbled goat cheese and any other toppings you’d like! (Hint: avocado, hot sauce, a fried egg, arugula)
