Greek Meatballs

Ingredients

2 lbs ground (beef, chicken, pork, turkey)

1 onion, grated

6 cloves minced garlic

1 tsp ground pepper

2 tsp salt

2 tsp cumin

2 tsp oregano

1 tsp cinnamon

1/2 cup parsley, minced

2 eggs

1 cup panko

Instructions

Preheat the oven to 400°F.

In a stand mixer, combine all ingredients and mix on low for 3-4 mins until well combined.

 

Using a small cookie scoop, portion each meatball out and roll in between palms to smooth. Space evenly on a parchment lined baking sheet. Bake for 25-30 mins. 

 

Serve with rice or orzo, roasted asparagus, fresh tomatoes and a quick Tzatziki sauce. 

 

Tzatziki: mix 1/2 cup plain greek yogurt, 2 tsp fresh dill, 1/4 cup grated cucumber, 1/2 tsp za’atar seasoning and pinch of salt to taste.
