Black Bean Stuffed Bell Peppers

Ingredients

4 bell peppers 

1 tbsp olive oil

1 onion, diced

2 cloves garlic, minced

Spice mix: cumin, chili powder, garlic powder, paprika, and cayenne

1 15 oz can of black beans, drained and rinsed

Cilantro to taste 

Jar of salsa

1 cup of cooked rice

Mozzarella cheese, at least a cup

Instructions

Preheat oven to 350 degrees

Remove the tops from the peppers and clean them out. Add a sprinkling of cheese to the bottoms of each.

In a large pan, warm olive oil and add onions. Cook until soft (about 5 minutes). Add in the garlic and cook another minute.

Stir in black beans and as much of each spice as you want. Mash up some of the beans with a fork. Add the cilantro and salsa, and then cook for 2 minutes. Remove from heat and stir in the cooked rice.

Fill the peppers with the mixture and top with as much cheese as you can fit.

Bake in the oven for about 30-40 minutes.
