Cooking Season

This week's delivery is our halfway point of the Fall / Winter CSA! We hope that through the darkest time of the year, our produce and add-on items are helping your dark days be merry and bright.

The mid-point of our CSA season also is the time to make your final payment on your Harvie account. If you are not paid in full please forward your final payment by etransfer or add your credit card to Harvie so it can be charged each time you receive your future shares (from December 30th to the end of the Winter CSA). For many of us this is typically the time to get together with people, entertain at home or go out to eat and drink. Because we are always at home, this year I have upped my cooking game. I have been better at planning meals, using up leftovers and trying new things. I hope you are doing the same! This week we were able to make our traditional eggnog. If you haven't ever made eggnog this one is worth a try, you will never go back to the store bought one! 

Ingredients:

Instructions:

1. Whisk 3/4 cup cream, egg yolks, and sugar in medium bowl until thoroughly combined and pale yellow, about 30 seconds; set aside. Bring milk and salt to simmer in medium saucepan over medium-high heat, stirring occasionally.

2. When milk mixture comes to simmer, remove from heat and, whisking constantly, slowly pour into yolk mixture to temper. Return milk-yolk mixture to saucepan. Place over medium-low heat and cook, whisking constantly, until mixture reaches 160 degrees, 1 to 2 minutes.
 
3. Immediately pour eggnog into clean bowl. Stir in rum and nutmeg. Fill slightly larger bowl with ice and set eggnog bowl in ice bowl. Refrigerate until eggnog registers 40 degrees, 1 to 2 hours, stirring occasionally.
 
4. Just before serving, using stand mixer fitted with whisk attachment, whip remaining 3/4 cup cream on medium-low speed until foamy, about 1 minute. Increase speed to high and whip until soft peaks form, 1 to 3 minutes. Whisk whipped cream into chilled eggnog. Serve, garnished with extra nutmeg. (Eggnog can be covered and refrigerated for up to 24 hours.)

THE BREAD THIS WEEK: This week, the bakeshop will be baking a Dark Rye bread for our members. This light, mildly acidic bread is commonly referred to as deli rye. It has a satisfying chew from the crust to the core.

NEW: We are offering a couple additional items from The Bakeshop on Boundary for the holidays; Frozen Pizza Kits which include 2 rounds of frozen dough and 500 ml of marinara. (At Sleepy G Farm we always have homemade pizza on Christmas Day).  In addition, you could try their take and Bake Cinnamon buns! These include 6 frozen buns and a pkg of cream cheese icing. It looks like we will also be eating these at Sleepy G on Christmas Day!!

APPLES: We have a new variety of apples this week from our orchardist in Thornbury Ontario: Organic Idared apples are medium in size, the flesh is yellowish-green, although sometimes a faint pink tinge can be detected. They are sweet and tart, juicy yet crisp and firm. 

Idared apples are famous for their excellent cooking and baking qualities. Idareds are particularly good for baked apples, since they hold their shape when cooked. They can also be used to make naturally pink applesauce if the skins are left on. Don’t limit them to cooking, however, since they are also good apples to eat fresh as is or in salads. They pair well with strong, soft cheeses such as Roquefort and other blue cheese.

HERBS: This summer I became more interested in growing culinary herbs. I don't grow anything strange or unusual but in 2020 we had lots of beautiful herbs available for our summer CSA members. At the end of the season, we dried several bunches of thyme and sage for winter distribution. These herb bunches are perfect for your poultry stuffing, your turkey stew or any savoury dishes. These herbs have been added to some shares through Harvie but and can be added or removed during the customization period.
