Welcome to the First Week of Spring!

Posted on May 3rd, 2019 by Tadd Petersen

Welcome to the first week of our Spring CSA program!

The team has been hard at work raising transplants from seed, prepping fields and then planting the fields with many different varieties for this season. The weather has been unpredictable but we planned for that and our team is very excited to start the new season with our CSA community. The hoop houses are also full of delicious ingredients such as Salad Mix and Pac Choi which will be harvested for your CSA share this week.  If you have never cooked with Pac Choi before, we want to encourage you to try it! Pac Choi, also called bok choy, is a Chinese cabbage that can be prepared similar to many mustard greens.  This variety tastes slightly bitter raw but cooking the Pac Choi neutralizes any bitter flavor and brightens the color of the leaves.  It tastes amazing in a simple stir or you can throw it on the grill for a quick side dish.

Just a few reminders!

  • We want to encourage everyone to bring their own bags to carry their CSA share items in home.  This will help us meet our goal to minimize waste and eliminate the need for cardboard boxes and plastic bags.
  • For those of you that ordered a Protein Share, these are delivered bi-weekly starting the first week of the CSA season.  You can expect your first delivery the week of May 6th and will receive it every other week for the rest of the season.

Make sure to let us know your favorite way to enjoy Pac Choi or any other item in your CSA share!  Tag us in your posts on Facebook or Instagram and we will make sure to share with the rest of our community.  Our CSA program is built our the support from our amazing community so we cannot wait to connect with each and every one of you this Spring.  Please feel free to reach out with any questions or comments.  If there is one thing we love to talk about, its food.

Thanks!
