Farm Happenings for October 29, 2020

This week at our farm we will be cutting out our small Celery Root crop. Celery root (celeriac) and Parsley Root are two crops our family has grown since the early 80's. We love to use them in our homemade Chicken broth/soup and every other soup we make. These are two vegetables I have often had to explain to people - What do I do with it?  Celery Root is much the same as any other vegetable you peel. You can cook it or add it raw to your salads. Cut the carbs of mashed potatoes by substituting half with celery root. Serve in place of potato salad, just cube and boil for 15 min, cool and add an oil/vinaigrette dressing that is filled with fresh parsley, green onions, dejon mustard. Make a fresh chip dip, cut, boil, mash, add touch of mustard, curry powder, tiny splash of vinegar, salt and pepper and stir.

Last week I promised you a couple recipes, you should have them in a separate email tonight.  With the availability of recipes on the internet, I am always surprised by the number of people that take the free recipe booklets, cards, brochures at our market. I too still order the milk calendar ever year just for the recipes.
