Farm Happenings for September 30, 2019

Posted on September 27th, 2019 by Joan Norman

New to the list this week is savoy cabbage. Savoy has a great hearty texture that is more similar to lacinato kale than it is to green cabbage. We like roasting savoy cabbage with sausage and onion or adding it to a hearty veggie soup.

We have also added sweet potatoes to the list this week. These sweet potatoes are fresh out of the field and have not been cured yet. These will keep fine for a week or two in the refrigerator but are not well suited for longer term storage. We will begin curing the sweet potatoes in a couple of weeks so the ones you get towards the end of the season will be better to store into the winter. "Curing" sweet potatoes involves keeping them around 90 degrees and relatively humid for 5 days. This helps heal any damage to the skin during harvest and starts converting starches to sugar.
