Preserving the harvest

It's the point in the season that I'm always itching to get some of summer's bounty in the freezer. Canning isn't a real option for us from a time commitment perspective; I feel fortunate when I get a few bags of tomatoes and peppers in the freezer for winter chili.

But if you're able to make a little time for preserving some of the season's offerings, now is the time to do it! We have a few half bushels of pickling cucumbers available, lots of paste tomatoes, and bags of basil for pesto. Your future self will thank you when it's January and you have some vibrant green pesto to add to your pasta dishes, or frozen tomatoes for a batch of delicious homemade sauce.
