Farm Happening for Winter #3

Say HELLO to the giant squash! It's called a Moapa Squash and we got it at the Farm Conference last month from some farmer friends who farm south of Las Vegas, NV.  The seeds of this squash were brought to their valley by early pioneers and have been handed down and saved ever since.  We're very interested in this squash because they describe it as "very hardy" and not affected by the evil squash bugs!!  Sign us up! :)  The flesh has a beautiful light-salmon color to it, is delightfully mild and very delicious! We'd love to share some with you!! If you choose it in your box, you can cook it as would any other winter squash. It also makes great soups and pies, says Laura from Quail Hollow Farms (our farmer friend).  In addition to our typical winter fare such as potatoes, carrots, onions, and a winter salad mix, our other offerings this month are in anticipation of Valentine's Day: homemade Chocolate Beet Bread, Lizzy's Sweetheart Shortbread Cookies, and Sweet Beet Hummus.
