Our new flock of hens have started laying... lots!

For those of you getting egg shares you will see a variety of sizes. These are pullet eggs, for the first week to ten days the young layers have a variety of egg sizes, and then they sort things out. By the time they are a month into laying they are pretty consistent on sizes. The nice thing about these pullet eggs is you often get double or triple yolks, even if it is a smaller egg!

We will be opening up more space in our egg shares starting this week, so if you don't get eggs yet and want some you'll be able to sign up. We also do eggs all year long, so you can get them for your family even when the veggies stop.

This week we are also featuring one of my favourite greens: mizuna. Mizuna is in the mustard family and tastes like a mild arugula. You can eat it fresh, or you can sauté it with butter and garlic. When it comes with long stems I use it in place of noodles. It's a lovely thing, and we hope you enjoy it. Ours is coming from Grand Trunk Veggies as when ever we have tried to grow it in our gardens the flea beetle absolutely destroy it.
