One potato, two potato, three potato....

Wow, We harvested over 800# of potatoes this last week!!!  A huge thank you to those who came out to help dig, pick up and sort potatoes.  Because we're such a small scale farm, we do many things by hand without the use of machinery.  That includes harvesting potatoes.  We don't own a large tractor that can help dig them, so we use digging forks and human powered skills!  It's quite a fun endeavor.  Sort of like digging for edible gold!  You find all sorts of fun shaped potatoes like this Nicola heart shaped potato.  This week there will be Nicola potatoes in the share.  These are one of our favorite potatoes to grow and to eat.  They are sweet and creamy, ideal for mashing or roasting.  Despite the sweet flavor, they actually have a lower glycemic index than most other potatoes and are full of nutrients.  In future shares you'll also see red potatoes, purple skin and purple flesh potatoes, pink skin potatoes and more!!!

Other things happening on the farm:

We're starting to get more ripe tomatoes and peppers.  As well as tomatillos!  If you've ever had Salsa Verde or Chile Verde- the base was made with these cute little relatives of the tomato.  The tomatillo has been around for centuries.  Thought to be first domesticated by the Aztecs in Mexico/Central America. Tomatillos are a good source of dietary fibre, vitamin C, vitamin K, and niacin.  We grow 4 types of tomatillos, two types of purple, green, and yellow one called Amarylla.  One of our favorite ways to make salsa is with green tomatillos and spicy peppers.  Here's my go to recipe: https://week99er.com/new/roasted-tomatillo-salsa-canning-recipe/   Hands down the best green salsa recipe I've ever tried.  Though, I usually add in some extra hot peppers for more of a kick.  We unfortunately don't have regular cilantro at the moment due to it flowering.  But we do have the flowers available!  The flowers taste like cilantro with an added sweet beauty.  Great for chopping up into salsa or adding to a salad.  The seed of the cilantro plant, also called coriander is edible and makes great pickles!  Every part of the cilantro plant is edible, even the roots!  Lots of Thai cooking uses cilantro root for their curry paste and other recipes.
