Farm Happenings for July 5, 2020

I wanted to use this farm update to talk about how you can make your harvest last longer. With all this warm weather things tend to wilt fast so we work hard to harvest when it's still cool and get our veggies into refrigeration as soon as possible so they stay crisp longer for you. There are a few tricks that are easy to do and will keep your produce fresher a little bit longer.

1) when you get delicate greens like lettuce you can soak them in ice water before putting them in the fridge to keep them fresher longer. make sure they are dry before putting away. If you notice your greens starting to wilt you can also soak them to give them some new life.

2) Root vegetables should have their leafy greens removed as soon as possible as well. Many of those greens like beets, turnips, and radishes can also be eaten. My favorite way to make pesto is with radish greens

3) Another great trick if you have the space is to place your stemmed vegetables such as kale, chinese cabbage, and poc choy in a container just large enough to fit the stems, e.i. a mason jar, fill half way with water and then place in the fridge.
