Why winter lettuce tastes SO good!

Did you know that the best tasting lettuce of the whole year comes late in the season?

We regularly have customers at our winter market exclaim that the lettuce they buy from us in November and December is the best they've ever had. It's sweeter, it's crunchier, it's texture is much improved over summer lettuce. How can that be?

The answer lies in the cold. When the temperatures start to dip below freezing, even in our tunnels, lettuce responds by creating more sugars to help it withstand freezing temperatures. This makes the lettuce taste sweeter and also helps to improve the texture and crunch. This effect is most notable on our head lettuces but our lettuce mix also improves significantly.

Depending on the kind of late fall/early winter we have, we are planning to have lettuce available through all of December.
