Curing Garlic

One of the things we love about growing garlic is that it stores for SO long once properly cured. It may sound complicated but curing garlic is basically just letting the garlic rest and dry out for around 2 weeks so that the outer layers of garlic dry and form a tight wrap around the plant itself.

Our garlic curing process is fairly simple. After we harvest the garlic, we lay it out in an even layer on pallets in our wash and pack shed. We then set up a few simple fans to keep air moving around the garlic to help it dry out evenly. Once the garlic is cured, we trim off the tops and the roots and peel back a single layer of the skin so that you're left with a shiny bulb of garlic that can be stored for several months.

In our own pantry we've had some garlic last for around 6 months though we generally recommend folks use it within about 3-4 months.
