TRACTOR CSA - Week 7

Posted on July 10th, 2020 by Becca Smith

Meet Jim Edwards

Jim Edwards is a well-known farmer and community member in Yancey County. To know him is to love him. However, you may not know much about his farming operation…

Jim grew up on a dairy farm and later, ran a tobacco and beef operation. He says the farm brought his family together and instilled values such as hard work, teamwork, tenacity, dependency, and doing a job properly. He inherited the farm he owns now from his family. After the tobacco buyout, he transitioned to produce, specializing in green bell, jalapeno and serrano peppers. When asked why he likes growing peppers the most he said: “it gives me a sense of satisfaction to grow peppers as big as pumpkins.”

Jim is also growing two different kinds of corn this year. Sweet corn and Jimmy Red. The sweet corn is best eaten freshly picked off the stalk. Jimmy Red, on the other hand, is a dried corn that Jim and his farming partner Michael mill into cornmeal. Some of you may find some of the cornmeal in your bag this week. Jim’s sweet corn and peppers will be featured in the CSA later this year.
