Kimchi Time!

I'm so excited about the gorgeous Napa Cabbages going into boxes this week.  I know this veggie is either "love it, give me more" or "what do I do with this?" so I'm here to invite you to foray into fermentation. It's so tasty, so easy, and good for you!  Kimchi is one of my favorite ferments, and if you have salad turnips lying around from last week, they're a great sub for daikon radish.  You can find my favorite easy-starter kimchi recipe here, and don't be afraid to flirt with veggie substitutions if you don't have something.  If you don't have Korean Gochugaru, you can use regular chili flakes and it'll still be great, that's what I did in the photo above.

If you're not into fermentation, try a Napa Cabbage Salad or a Stir-Fry, there's really no going wrong with this leafy, succulent cabbage.

We've got more tomatoes available as a swap in this week, including Cherries! These early tomatoes are limited and special this time of year, as tomato season in Central Oregon doesn't start until late July, but we want you to have the option to add them in if you want--we cherish tomato season as long as we can here.  More tomatoes will be coming as standard box-fare later in the season.
