First Share of Spring!

We are so excited to be back with fresh produce boxes for another season.  Things are looking very lush, and GREEN this time of year.  As we edge into spring, only the very fastest growing and most hardy crops are ready for harvest.  You can expect spring boxes to be pretty leafy, but we find that our bodies really crave those fresh greens this time of year, and their flavor and tenderness is the best before it gets warm, anyway.

We're looking forward to so many varieties of greens this spring: Kale, Spinach, Baby Bok Choy, Lettuce, Arugula, and Mesclun Greens.  We're also looking forward to some early roots: radishes and sweet salad turnips.  We even added in some really special crops: green garlic and garlic chives to flavor your spring meals, and we've got Basil tucked in with the tomato plants that will be ready in just a few weeks for it's first harvest.

This week, we hope you'll be overjoyed by the fresh spring bounty, but if you're overwhelmed by the spring leafiness, check out this recipe that we made over the weekend: Red Kuri Squash and Kale with Tahini Sauce.  This time of year for us is all about using up the last of the stored crops, accompanied by spring greens, it's the best.
