Soup Season and Pickling Cukes

Is it soup season?  Sometimes it's hard to tell with the dramatic weather shifts we've been having.  And instead of worrying about the second and potentially third frosts we're supposed to get (cover your gardens if you have one!) we're going to focus on soup.

We save the last of our potatoes of the year just for our CSA members, so that we could have a week with both potatoes and leeks-- which are the makings of our favorite and most simple fall treat.  If you aren't quite ready for soup yet, as the 90s come back later this week, no worries, these veggies will keep for several weeks.  Our leeks (and onions) are one of the crops that has really flourished and braved the temperature swings this year, and we're so, so happy with them.  We planted two types of leeks this season. 

The one in the photo and in boxes this week is called King Richard- a tall leek with a long shank.  We love this leek because you get so much more of the tastiest part of the leek, though even the leaves can be used- they're great for stock.  Stick them in the freezer (we do this with carrot greens and all sorts of scraps) if you aren't ready to make stock quite yet.

The second leek is a much more hardy 'winter' leek that will brave impressively cold temperatures and can be harvested late into the fall.  You'll get to try this leek towards the end of CSA season.

We've also got the last of the sweet corn and the first of the celery available this week, in addition to lots of other veggies for you to build your own soup and create some comforting food for the shortening days and the shift toward a period of rest!

And one more thing, we’ve got 5# bags of pickling cucumbers available as extras in case anyone is hoping to make pickles- now is the time!  Let us know if there’s anything else you’d like in bulk for preserving!
