Beans and Potatoes

Hello from the farm!

This week we are adding two very popular crops to our harvest list that will be available for several weeks to come: Beans and Potatoes! Our Yellow and Green beans are picked and then cooled (not washed). You will note that there is soil on the beans because our irrigation sprinkler tends to splash soil back on the plants when we are irrigating - and this year we seem to be irrigating all the time!

When you get your beans home keep them in a bag in your fridge. When you are ready to eat them just give them a rinse in a sink filled with cool water and let the soil drop to the bottom. If you plan to put them back in the fridge, you can lay the beans on a kitchen towel and pat dry. Use your beans within a couple of days after washing. We offer your beans in approx. 1 lb portion and they will be loose in your share so please bring an extra bag or two to put them in.

Brendan's favourite crop to grow and favourite food to eat are potatoes! We cooked the first of the new potatoes this week, halved, and boiled. They were wonderful! New red potatoes look so beautiful boiled soft with cracked skins. We ate them with butter and salt and after a long winter and spring eating potatoes from 2019 it reminded me how much different a new potato tastes - more earthy, bold and firm. Even when you cut them you will notice how they split right open like they are ready to burst. We offer potatoes in an approx. 2.5 lb portion these will also be loose in your farm share. Our new mesh reusable produce bags are perfect for both new and "old" potatoes when you store them in the fridge or a cool dry place.

BEANS N' SPUDS

  • 5 slices bacon, roughly chopped
  • 1 cup chopped sweet onion (about 3/4 of a large sweet onion)
  • 1 pound fresh green beans (rinsed well), ends removed and snapped in half
  • 1 pound red (“new”) potatoes cut into 1.5" pieces
  • 1 teaspoon kosher salt (more or less, to taste)
  • 1 teaspoon pepper (more or less, to taste)

INSTRUCTIONS

  1. Cook bacon pieces in a large saucepan over medium heat until lightly browned (but not crispy), about 4 to 5 minutes. Add chopped onion and continue to cook for an additional 5 minutes, stirring frequently.
  2. Add green beans and potatoes and cover with water. Add salt and pepper.
  3. Increase heat to medium-high and bring to a simmer. Once simmering, reduce heat to low and cover saucepan.
  4. Simmer gently for approx 20 minutes, or until green beans and potatoes are tender.
