Fresh from the Farm - Transitioning to Fall Veggies ?

Hello CSA members,

As the vibrant colors of fall make their presence known on our farm, we're also transitioning from summer to fall veggies in your CSA baskets. While the seasons change, there's still an abundance of delicious produce to enjoy.

To keep our crops thriving during the recent cold spell, we closed up the high tunnels and added blankets for that extra layer of protection. Thanks to these efforts, our peppers and tomatoes are still looking fantastic, extending your access to these summer favorites for a few more weeks.

With soccer season behind us and basketball season yet to begin, we've been focusing on eating a little healthier. It's been a joy to support our high school sports teams in their tournament play, cheering on our cousins, and friends. Go Falcons! As we've been indulging in plenty of greens, we're curious about your favorite salad dressings. Ours include Caesar and Ranch. What are your go-to dressings, and do you have any homemade recipes you'd like to share?

In the spirit of culinary exploration, here are five salad dressing recipes to inspire your next salad creation:

1. **Balsamic Vinaigrette:**
- 3 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/2 cup extra-virgin olive oil
- Salt and pepper to taste

2. **Honey Mustard Dressing:**
- 2 tablespoons honey
- 2 tablespoons Dijon mustard
- 2 tablespoons mayonnaise
- 1 tablespoon white wine vinegar
- Salt and pepper to taste

3. **Lemon-Tahini Dressing:**
- 3 tablespoons tahini
- 2 tablespoons fresh lemon juice
- 1 clove garlic, minced
- 2 tablespoons water
- Salt and pepper to taste

4. **Thousand Island Dressing:**
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 2 tablespoons sweet pickle relish
- 1 teaspoon white vinegar
- Salt and pepper to taste

5. **Maple-Dijon Dressing:**
- 3 tablespoons maple syrup
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 1/4 cup extra-virgin olive oil
- Salt and pepper to taste
