Farm Update: Exciting Partnerships and a Bounty of Red Tomatoes! ?

Posted on September 16th, 2023 by Lynne Schultz

Dear cherished CSA members,

We hope this message finds you well, and we sincerely apologize for the slight delay in sending this email. The past few days have been a whirlwind of activity here on the farm, all thanks to the wonderful world of soccer!

As many of you know, soccer season is in full swing, and our family is fully immersed in the games and practices. Last night was quite the adventure as we didn't return home until a late 11 pm. Why, you ask? We were hard at work, picking and packing for the markets to ensure that you, our valued CSA members, continue to receive the freshest produce.

With soccer commitments pulling us in different directions, our trusty farmworkers have been holding down the fort at the Lancaster market, while yours truly has been braving the bustling Dublin Market all on my own. It's been quite the hustle, but your unwavering support keeps us going strong!

Now, for some exciting news that we can't wait to share with you. We've rekindled our partnership with the talented folks at Pasture Fowler, and our friend Steven has been working his magic once again. We're proud to introduce our latest creation: sauerkraut made from our very own farm-fresh cabbage!

We want to extend our heartfelt gratitude to Steven for his dedication and hard work in bringing this delicious sauerkraut to our CSA members. It's an exciting way to savor the flavors of our farm in a new and delightful form.

While fall is upon us, our tomato vines are still bursting with ripe, juicy treasures. So, let's take a moment to celebrate the beauty of these ruby-red gems! Here are ten delectable ideas to make the most of our beloved red tomatoes:

  1. Caprese Salad: Layer slices of tomato, fresh mozzarella, and basil leaves. Drizzle with olive oil and balsamic reduction for a classic Italian delight.

  2. Tomato Bruschetta: Top toasted baguette slices with diced tomatoes, garlic, basil, and a sprinkle of salt and pepper.

  3. Tomato Soup: Simmer ripe tomatoes with onions, garlic, and herbs, then blend for a comforting bowl of tomato soup.

  4. BLT Sandwich: Layer crispy bacon, lettuce, and thick tomato slices between toasted bread. Don't forget the mayo!

  5. Tomato Salsa: Dice tomatoes, onions, jalapeños, and cilantro for a zesty homemade salsa.

  6. Margherita Pizza: Top pizza dough with tomato sauce, fresh tomato slices, mozzarella, basil, and a drizzle of olive oil.

  7. Tomato and Mozzarella Panini: Create a flavorful panini with tomato, mozzarella, pesto, and your choice of bread.

  8. Tomato Pasta: Toss diced tomatoes with cooked pasta, garlic, olive oil, and a dash of red pepper flakes.

  9. Stuffed Tomatoes: Hollow out large tomatoes and fill them with a mixture of breadcrumbs, herbs, and cheese. Bake until golden.

  10. Tomato and Cucumber Salad: Combine sliced tomatoes, cucumbers, red onion, and feta cheese. Dress with olive oil and red wine vinegar.

We hope these ideas inspire you to make the most of our bountiful tomato harvest! As we transition into the fall season, we look forward to continuing to provide you with the finest farm-fresh produce.

Enjoy the beautiful weather this week, and please accept our heartfelt thanks for being a part of our farm community.

Warm regards,

The Schultz Family ??
