Celebrate Earth Day with a nutritious local salad from your kitchen!

It's salad season and we know your fridge is full of greens. Time to step up the salad making excitement in your house!

Yesterday's lunch for me -farm fresh arugula with pea shoots, toasted pumpkin seeds, slivered scallions, shredded carrots & goat cheese drizzled with fresh lemon and olive oil.  Not gonna lie I make salads like this for myself ALL THE TIME!
 
Spending time to eat a healthy meal is an act of self care I won't ever bypass again.  I feel so much better when I eat clean. 


Isn't it time you sat down to a healthy lunch and added some self care in your day?  


Taking time to read a chapter of a good book or chat with friends over lunch IS an act of self care.  You're always so busy taking care of everybody else....put yourself first.

Eating a nutritious lunch is one simple step in the right direction. Take time to refuel and make good use of that fridge full of nutrient dense super fresh OSF produce. 

You'll have a chance to get a bag of first cut, young tender arugula and/or spicy salad mix this week. The beauty of these 2 greens is that you can cook them too! They are easily sautéed as a side dish-just a quick touch of heat and they'll be ready in a heartbeat. 

Storage tip:  Keep all your greens in the bags we send them in. Harvested the day before, most all of you report that the greens last easily through the week. If they get wilty our melty give them a dunk in cool water and a spin in the salad spinner, voila freshened greens!

Recipe idea: I'm a big fan of homemade salad dressing but sometimes the quickest and easiest dressing for greens is a squeeze of fresh lemon, a drizzle of olive oil and freshly cracked salt & pepper. This is especially good on baby arugula!
