Farm Happenings for April 19, 2022

Hello Farm-ily! 

Ya know how the weather warms up in early spring and we get all excited?  We break out our shorts and tank tops, start planning beach weekends...and then we're back to a cold spell.

Hang on to your winter coats, just sayin'. Mother Nature will decide when we're done with the cold.

Until then, wow, we've enjoyed this warm week!

It's been a big one here.  We planted nearly 600# of potatoes and thousands of transplants!

We have a fun product to offer this week. Hyper local, non GMO freshly ground cornmeal. Delicious. We're packing it up simply in Ziplock freezer bags. You can keep this cornmeal fresh in the freezer indefinitely. It makes the best cornbread and is great for breading fish, veggies or making corn cakes!

Here's my favorite recipe:

Golden Yellow Corn Bread

1 c freshly ground cornmeal

1 c all purpose flour

1/4 c sugar

3 tsp baking powder

1 tsp salt

1 c milk 

1 egg, beaten

1/4 c oil

Preheat oven to 425F

In a bowl combine cornmeal, flour, sugar, baking powder and salt. In a separate bowl, combine milk, egg, and oil. Combine the wet and dry ingredients and stir until just blended.

Pour batter into 8x8 greased pan. Bake 20-25 minutes or until golden brown.
