Farm Share 2023 Week 3: Garlic Scapes!

Welcome to week 3 of the Farm Share! We've got a TON of veggies available this week, make sure to customize your share to see the whole variety!


What's Happening on the Farm

This week we are planting our 3rd succession of beans, our 3rd succession of carrots, and our 4th succession of spring onions in the field. In the greenhouse, we are potting up cabbages for our fall planting, and seeding cucumbers for a late summer planting. This is the time of the season when the weeds start to pull ahead of us so we have lots of weeding to do out there! 

We are also beginning to prepare our beds for the fall plantings that go in towards the end of July. In the field, cucumbers and zucchini are flowering and we have tiny broccoli growing. Summer produce will be here soon!  


Veggies This Week 

*NEW THIS WEEK* Red tropea onions (specialty sweet young red onions), sweet mini summer cabbages, garlic scapes, carrots.  Our PEAS are almost ready but we don't have enough for everybody this week; if you come to the store you can grab the first sweet shelling peas there. Next week we expect to have plenty!

This is the time of year that I introduce Garlic Scapes to the uninitiated. 

Being part of a Farm Share like ours means eating with the season, and trying new things, and garlic scapes are the perfect example.

Garlic scapes are the flower stem of the garlic plant! Like all plants in the allium family, garlic will “shoot up” a stem that will eventually form a flower. Inside are the seeds of the garlic plant. Of course, most people grow garlic by replanting the bulb into the soil. You CAN plant by seed but it will take 2 years to grow garlic from seed.

When growing garlic, it is important to remove the scape so that the energy of the plant will go towards growing a large healthy garlic bulb.

Garlic scapes are curly stems with pointy ends. They have a mild garlic flavour and a crisp texture. 

How to Use Garlic Scapes

  • Grill them whole (our favourite!)
  • Slice them and add to dishes instead of garlic
