Our second planting of Edamame is in. If you have children in your house, I am sure you are making Basic Edamame. In case you need it, here is the skinny on how to prepare it. Basic Edamame Preparation:  Boil water in a large pan.  Wash Edamame beans well. Add Edamame beans to boiling water and boil for 5-8 min or until the pods just begin to open.  Drain. 

  • To serve as a snack or appetizer, sprinkle salt over Edamame shells. To eat, place the salted shell in mouth and pop out the bean. Discard shell.  Instead of the salt, you can make a mixture of soy sauce and ginger to dip the shells in before eating.   You can serve Edamame warm or cool.
  •   To add to recipes or salads, remove beans from the shell after draining and cooling.  

Edamame and Pasta Salad 4-6 servings

  • 8 oz pasta, cooked and cooled
  • 1 teaspoon salt (or less of pasta salted during cooking)
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • ½ cup bell pepper, chopped
  • ½ cup onion chopped
  • ½ cup black olives, pitted and sliced
  • 2 oz pimento, chopped
  • ½ cup mayonnaise
  • 1 fresh tomato diced or about a cup of halved cherry tomatoes
  • 1 cup Edamame beans   

Cook pasta and cool. Toss pasta with oil, lemon juice and salt.  Mix remaining ingredients in a bowl.  Add pasta and mix gently.  Refrigerate and serve cold. If you salted the pasta when you were cooking it, use less salt to start with.
