Flowers are wonderful. They are the prerequisites to some of my most favorite fruits and vegetables, but are also stunning unto themselves. We are blessed to be surrounded by so many flowers at the farm and they never cease to amaze and captivate me.
Bees are big fans of flowers too. As their main source of sustenance, it is imperative for them to have access to many flowers. It’s also important for the flowers to be accessible to bees as well, for without bees pollinating our flowers, there would be no fruits. The codependency is a beautiful thing.
With the changing of the seasons, we get a new lineup of flowering plants. The nectar in fall flowering plants makes for dark, amber colored honey. I prefer the taste of the darker honey as opposed to the lighter, more floral spring honey because I think it has a richer, fuller flavor. But I could just be making all that up in my head.
If this piques your interest, give our freshly harvested honey a try. I don’t think you’ll be disappointed. It’s honey. It’s local. And if you’re so inclined, I can introduce you to the bees. Just ask. I know all their names and they’re cool.

Eat well and enjoy.
