Pumpkin Seeds and Greens

We have so many tiny pumpkins and a few LARGE pumpkins. These are ready to be displayed, carved, or eaten! Pumpkin is very beneficial to our health. Even the seeds are well-known to carry many nutrients. "Pumpkin seeds are rich in antioxidants, iron, zinc, magnesium and many other nutrients. An ounce (28 grams) contains about 151 calories."(Healthline, 2019) An ounce is about a handful of pumpkin seeds. I made a pie from scratch by baking the pumpkin at the same time as roasting the seeds. The pie was amazing. You can even serve the cooked pumpkin the same way you would any other squash. I highly recommend trying it out with our tiny pumpkins if you've never done it before. 

Along with our pumpkins, we also have parsnips, kale, collard greens and bok choy ready to put in your box!
