Farm Happenings Week 3 Fall CSA, 2021

Posted on November 12th, 2021 by Aspen Moon Farm

Asian stirfry theme week!  This share is filled with delicious Asian vegetables like Napa Cabbage, Tatsoi, Daikon Radish, Hakurei Turnips, and cilantro (also carrots, garlic).  Best stirfry tip... use arrowroot powder, it will change your stirfry experience to more YUM!! Try a simple sauce of honey, tamari, rice wine vinegar, sesame oil, miso paste, and arrowroot powder; pour over the stirfry at the end and add your favorite protein.  Sliced raw daikon radish and cilantro make the perfect crunchy topping.  You can even add roasted acorn or butternut squash to the stirfry.

Daikon Radish is adored for its flavor, a nice sharp radish that is great sliced raw in salads.  It is also considered a "Superfood" for its high nutrient and enzyme content.  It is known as a blood purifier and supports good digestion.  Daikon is wonderful chopped and added to miso soup, stirfry, eggrolls, or sliced with apples for a perfect snack.  You can also make Chinese "Turnip cakes" which are actually made with Daikon radish (not Turnip) along with rice flour.  Sometimes I put slices on my morning toast to start the day with a Zing!
This is also a great week to make Kimchee, a Korean fermented food made with Napa, Daikon, carrot, and garlic that is super yummy and medicinal and super easy to make.

Fennel Bulb- this is likely the only offering of fennel bulb this fall.  Wonderful in fennel apple salad (with celeriac instead of celery), great in golden fennel pasta, and more....  Remember to use the extra fronds for a nice medicinal fennel teasan.

Sneak Peak at next week's Thanksgiving share (please keep in mind that this is tentative).  Each share will be packed based on your preferences and you can do some swapping (some items may be limited).  We will have a good amount of extra items available if you would like to purchase extra produce for the holiday.  Availability will likely include:  some of each- Arugula, Spicy Greens, Spinach, Butternut squash (did you know you can use butternut in place of pie pumpkin for pie or breads?), Watermelon radish (which looks so pretty sliced into little watermelon shapes on salad), Beets, Rutabaga (great mixed with potato dishes), Purple Top Turnips, Celeriac (for your stuffing), Potatoes (4 lb bags of mostly Yukon Golf or Purple Viking (white on the inside) for your mashed potatoes), Onion, Shallots- golden, some fresh Sage, and plenty of our special Heirloom Red Cornmeal which makes the very best cornbread (or for stuffing or added in pie crust).
