Farm Happenings Week 3 CSA, 2021

Spring is the radish time of year!  The crops are so healthy and lush, they almost glow in the fields with vibrancy.  This is the time of year when radishes taste the very best!  They love some cool weather to taste crisp and zesty, but not too spicy.  Eating seasonally makes everything taste better! 

We have been rotating the cows and sheep through some of the fields these past few weeks.  They have munched down the cover crop we planted last fall.  This is regenerative agriculture at its best!  The livestock are the very best thing for the soil.  Even the shapes of their hooves walking through the fields provides the best aeration without compaction.  We feel this contributes so very much to the high-quality and high-nutrient content of the produce grown here at Aspen Moon.  We value the place of the animals as part of the whole farm organism and this is a philosophy at the heart of Biodynamic agriculture.  There is something that just feels so right when we see the animals move about the farm and do their good work effortlessly.  We give them lots of love too.  Our hard workin' farm interns feed and water all the livestock daily.  This responsibility is rotated each week so that we have one person fully focused on the animal care.  They get the best care this way and the interns enjoy the connection.  Recently, we had a high school class visit the farm and they sang to the cows and it was a special moment on the Farm (I think it also inspired us all to try this...).   

Ideas for this week: homemade Caesar Salad with Romaine and green garlic- it's surprisingly easy to make at home, quiche heavy on the greens and herbs, Radish butter- just shred some radishes and mix with room temperature butter and spread it on, Herb & Garlic dip- chopped fresh herbs and green garlic with olive oil and balsamic vinegar, add some greens to your smoothie,
