Yippee for the first CSA! May 21&22, 2020

Posted on May 18th, 2020 by Aspen Moon Farm

This is your first CSA share this season!

Be sure to look for our herd of heritage sheep that are grazing in the fields next to the Farm Stand.  They are doing a good job munching down and working in the cover crop.  The cows are  in the back field right now doing good work grazing that pasture and having babies.  We have had 5 calves so far this Spring.  Yep, they just birth by themselves out there in the pasture.  We check on them a lot of course (and they all get named by Jason & Erin's 10yo).  Both herds are rotated throughout the fields as crops move in and out.  This is regenerative agriculture at it's best!  Most of the crops in this week's share are coming out of the other field right now, on the south side of Hygiene Rd behind the hoop houses.  The Niwot fields are being prepped and seeded with lots of diverse crops too.

This week we have included lots of good over-wintered spinach.  Please enjoy this nutrient packed spring treat while it lasts for just another few weeks!  Think homemade saag (easily made with greek yogurt), spanikopita,  creamed spinach, ....

Boc Choy is another Spring item that will only be here for a few weeks.  Try it stirfried with Hakurei turnips and cashews over basmati rice with a nice Spicy Peanut sauce!  Boc Choy is also great chopped raw in quinoa salad with raw chopped turnips, radish, and feta cheese.

You can pick up your share Thursday or Friday 2-6pm at the Farm Stand.  7927 Hygiene Rd.

Thanks for being part of Aspen Moon Farm!  It is your membership that inspires us everyday.  Be well!
