CSA Week 3 Is Here!

Happy Week 3 Everyone! This week we're back with extra asparagus!! Asparagus season can go by quickly, so enjoy the asparagus while you can! If you're not cooking your asparagus right away, you can keep the bunch in a glass of water in the refrigerator until you're ready to cook it. Did you know you can also store it in the freezer for up to a year? Asparagus needs to be blanched before freezing, to preserve the color and texture. To blanch the asparagus- add one bunch of fresh asparagus spears to boiling water. Let them cook for 2-5 minutes, until bright green and tender, depending on how thick your asparagus is. Once they're cooked, place them in a bowl of ice water for 2-5 minutes. Drain the water and freeze them in airtight containers. For better separation of the pieces, freeze in a singl layer on a cookie sheet first, and then move them to a bag or container once frozen.
