Farm Happenings for June 4, 2019

Happy June!

WHAT A BEAUTIFUL DAY.

 It's been a productive week here at Oak Spring. The squash, tomatoes and peppers are blossoming, the it has rained just enough (no complaints), the sun has shone and we have plenty of choices for you this week.

Yes, there is lots of lettuce; Lettuce tell you why.. 1. WE LOVE salad! 2. We pride ourselves on growing fine lettuce throughout the season. 3. It's a favorite with our market customers. 4. It's so good for you with healthy does of fiber and Vitamin C.

We have several greens choices this week including butterhead lettuce heads, our mesclun mix (cilantro free this week!), salad mix, mizuna, mustard greens, baby red Russian kale and braising mix.  Our braising mix is medium sized mustards, mizen and kale meant for saute or braising. This week they are tender and young enough to eat raw.

We also have the season's first garlic scapes!  YUMMY.  Slice them up and roast them for 'garlicky green beans' side dish. (but no actual green beans yet..)

 

If you haven't checked out the Eventbrite page with our June 8th Farm to Table dinner event check it out now. There is Laughter Yoga first from 3:30pm-4:30pm. You can come for just the yoga if you'd like or sign up for the dinner as well.

Mini Sungold Tarts-Goat cheese, thyme, white balsamic glaze 

Chicken Liver Pate Porcini, bourbon, raisins 

Oak Greens Salad Fava beans, beets, snap peas, feta, strawberry-tahini dressing 

Oak Spring’s Chicken (non GMO pasture raised) -Charred brassicas, kohlrabi + egg salad, carrot yogurt 

Black Raspberry or Strawberry Cheesecake-Graham -date crust, pistachio
