Farm Happenings for August 24, 2021

Hello Farm-ily!

Did you know we're more than half way through our Whole and Summer Season shares? Time flies when you're eating good food. I try not to take tomatoes for granted in August but it happens...With such a stunning variety and mounds of ripe, juicy fruit at my disposal I forget they will only be here for a short while longer.  I LOVE all varieties of tomatoes and only eat them when they're in season. Years ago I stopped trying to satisfy my tomato tooth from the grocery store in January.

We've canned salsa, whole tomatoes, tomato basil sauce and pizza sauce so far this year and our pantry is glistening with 'put-up' homemade goodness. I've though about offering a canning class to my CSA members -let me know if you'd be interested. The paste tomatoes and San Marzanos are just coming in now!

How are the spaghetti squash recipes tasting? If you didn't get a chance to read all the benefits of spaghetti squash and my simple roasting recipe please take a look at last week's farm happenings. Lots of great info.

Today I want to share with you a quote from Amigo Bob Cantisano, a fellow farmer and activist who passed not long ago. It comes from the book 'Letters to a Young Farmer' on Food, Farming and our Future.  I had the pleasure of meeting Bob and hearing him speak at a conference in upstate NY a few years ago at Stone Barns Center for Food and Agriculture. A magical place. "Act locally, think globally. All of your actions, no matter how small, can have a huge impact on the environment and on the humans the it feeds. Every step wee take to improve the ecological stability and sustainability of our farms will have long lasting impacts."  

Thank you for supporting Oak Spring Farm and your local farming community. We have built the organic matter in our soil along with our community of like minded individuals over the years and our small farm feeds many families in this community. We love growing for you and are proud to do it the way we do, small sustainable and with a desire to educate both young farmers and our local community of eaters.

Storage tip of the week:

Keep your onions in the refrigerator. They are peeled and ready to use. If you want to keep them long term chop them, fill a ziplock freezer bag and throw it in the freezer. Remember to check out our veggie storage guide accessible on the Farrm-ily page.
