Farm Happenings for May 18, 2021

Hello Farm-ily!

I think it finally feels like tomato planting weather. We've been in the tunnels getting the last of our tunnel tomatoes in, hooking up the drip irrigation and clearing out all the transplants to let them harden off. We've planted the first of our outdoor tomatoes as well. Peppers and eggplants will go in next week.  It's a tricky time of year, the nights have been cool, we've been lucky not to have any freezing temps the last 2 weeks so all the outdoor crops have survived. The strawberries have fruit and it will be strawberry season SOON!

We have lots of great transplants and we will be at the market tomorrow with all our Certified Organic transplants-tomatoes, peppers, eggplants, lettuces, broccoli, kale, and more!  Tell your friends and family about our veggie transplant sale at the market and at our farm on Sunday.

Please come out to the farm this Sunday May 16th for our Spring Festival! Come meet some of our vendors like Daily Crisis Dairy, Floriculture micro farm, and Plants are Good with herbal tinctures balms and shrubs plus artist Lori Goodman will be here with her beautiful handcrafted mosaics! We'll have transplants, produce and Oak Spring Farm merchandise for sale, live music from 2 different performers, Jason & Emily a folksy duo and Brittain of The Whiskey Feathers with his soulful Americana tunes, farm tour is at 2pm, laughing yoga with Tammy and Jack Bray of Joyful Vibrations at 2:30pm, growing great tomato tips from Lisa and crew at 3pm, food from Oak Spring and Laura K. like A Friendly Bread's Challah sandwiches (vegan, vegetarian and OSF chicken salad), fresh salads, hummus, vegan 'chicken' salad, farm fresh egg salad, deviled eggs and more. Bring a chair, your good vibes & your favorite beverage and come hang out for the afternoon 1-5pm

The bread share this week is Roasted Garlic Asagio. We will also have Cinnamon Raisin and Simple Country available for purchase.

Recipe of the week:

Harvest Salad. serves 4

1 bag of OSF greens (salad mix, spicy mix,  arugula or mix it up)

2 pears or apples cored and sliced (I know they're not in season yet...substitute with strawberries in just a few weeks)

1/2 c. coarsely chopped walnuts or pecans

1/2 c dried cherries or cranberries

1/2 c crumbled gorgonzola or goat cheese

Optional: 1 pound of cut up roasted chicken

Dressing:

3 TBLS raspberry or strawberry preserves

3 TBLS red wine or balsamic vinegar

1/3 c walnut or olive oil

salt and pepper to taste.

In a large bowl toss together greens, nuts, dried fruit, pears, cheese. In a small bowl whisk together the dressing ingredients. pour over the salad and toss to coat.

Delicious as a lunch or dinner salad. Serve with a chunk of A Friendly Bread naturally leavened bread.

Storage Tip of the week:

Oak Spring salads are washed quite thoroughly. You can store them right in the bag we send them in. They should stay fresh until your next CSA pick up but if you feel they are looking droopy or have some deteriorated leaves dump the remaining mix in a bowl of water, agitate it with your hands, pick out the bad leaves and give it a spin in your salad spinner. Don't have a spinner?  Lay it out on a paper or dish towel and pat dry. Rinse out the bag and use it again!
